Who doesn't love a bit of carrot cake? If you're looking for a delicious, moist and easy carrot cake recipe to impress your friends and family, then you have come to the right place!

Ingredients

  • Carrot Cake
  • 330g Grated Carrots

  • 3 Medium Eggs

  • 130g Brown Sugar

  • 250ml Vegetable or Sunflower Oil

  • 260g Flour

  • 1 Tbsp Baking Powder

  • 2 Tbsp Mixed Spiced

  • 1 Tbsp Cinnamon

     

  • Cream Cheese Icing
  • 120g Cream Cheese

  • 28g Butter

  • 130g Icing Sugar

     

  • 1 Tsp Vanilla Extract

     

Method

  • Preheat your oven to 180C/160C fan. Use a pastry brush dipped in oil to grease a cake tin of your choice. 

  • Pour the sugar, oil and eggs into a bowl and mix until combined. Once combined, add in your grated carrots.

  • In a seperate bowl, sift in flour, baking powder, cinnamon and mixed spice. 

  • Combine the wet ingredients with the dry ingredients and mix everything together. 

  • Pour the mixture into the prepared tin and bake in the oven for around 30 - 40 minutes. 

  • Once baked, let the cake fully cool on a wire rack. 

  • Next, prepare the cream cheese icing by whisking butter until it has become lighter in colour. Add in the cream cheese and whisk further before adding in vanilla extract. Finally, sift in icing sugar and mix until combined (option to add some food colouring at this step).

  • Pipe or spread the icing onto the cake and enjoy!

This recipe has room for lots of customisation. Feel free to add in ingredients such as raisins, walnuts and orange zest to take the cake to the next level!
