Salted Caramel Brownies

Ingredients
- Brownie Batter
200g chocolate 50% or over cocoa solids (this recipe used 52%)
200g unsalted butter
1 tsp sea salt
25g caster sugar
130g plain flour
40g cocoa powder
3 large eggs
- Caramel
1/4 cup of brown sugar
397g can of sweetened condensed milk
20g butter
1 tsp vanilla extract
OR 1 can of caramel (397g)
Directions
Heat oven to 180C/160C fan
If making your own caramel, start by mixing together sugar and sweetened condensed milk in a saucepan over medium-low heat. Stir the mixture continuously until the sugar has dissolved. Remove from heat and stir in butter and vanilla extract and allow to cool. Once cooled add salt to taste.
If using pre-made caramel, in a small bowl, add 1 tsp of salt and mix.
In a separate pan, melt the butter. Once fully melted, remove from the heat and add in chocolate chunks until well combined.
Pour half of the caramel into a large bowl along with sugar and eggs and beat until well combined with an electric mixer or by hand. Then, add the chocolate and butter mixture too.
In another bowl, sift together flour, cocoa powder and a pinch of salt.
Combine the dry and wet mixtures together, using a whisk to create a smooth brownie batter.
Next, grease and line a traybake tin and pour half of the brownie mixture into the tin, levelling it with a spatula.
Using half of the caramel, spoon blobs of the caramel onto the brownie mix. Using a skewer or toothpick, swirl together the blobs of caramel to evenly distribute the caramel.
Finish off by adding the remaining brownie batter and top with the caramel, using the same technique.
Top off the brownie batter with a sprinkle of sea salt and bake for 25 minutes.
Once completely cooled in the tin, cut into squares and enjoy!
