Ingredients

  • 115g raisins

  • 2 tbsp sugar

  • 85g butter or margarine

  • 350g self-raising flour

  • 170ml milk

  • 1 tsp vanilla extract (optional)

  • 1 tsp baking powder

  • 1 pinch of salt

Directions

  • Sift the flour into a large bowl, along with baking powder and a pinch of salt.

  • In the same bowl, add in butter. Rub the flour and butter together with your fingertips until it resembles breadcrumbs. Once combined, mix in the sugar and raisins.

  • Next, make a well and pour in the milk and the vanilla extract. Using a spoon or spatula, combine the mixture until it forms a dough.

  • Tip the dough onto a floured surface, roll it with a rolling pin and cut out the scones with a cutter.

  • Place on a lined/greased baking tray and bake for 10 minutes (option here to top the scones with milk to give them a golden colour).

Notes

  • You don’t need a lot of resources or ingredients to make delicious scones. If you don’t have any cutters, use the rims of any cups that you may have. Simailary, if you don’t have a rolling pin, use cling film or whatever else you have. All of the ingredients are relatively inexpensive and easily available.
