115g raisins
2 tbsp sugar
85g butter or margarine
350g self-raising flour
170ml milk
1 tsp vanilla extract (optional)
1 tsp baking powder
1 pinch of salt
Directions
Sift the flour into a large bowl, along with baking powder and a pinch of salt.
In the same bowl, add in butter. Rub the flour and butter together with your fingertips until it resembles breadcrumbs. Once combined, mix in the sugar and raisins.
Next, make a well and pour in the milk and the vanilla extract. Using a spoon or spatula, combine the mixture until it forms a dough.
Tip the dough onto a floured surface, roll it with a rolling pin and cut out the scones with a cutter.
Place on a lined/greased baking tray and bake for 10 minutes (option here to top the scones with milk to give them a golden colour).
Notes
- You don’t need a lot of resources or ingredients to make delicious scones. If you don’t have any cutters, use the rims of any cups that you may have. Simailary, if you don’t have a rolling pin, use cling film or whatever else you have. All of the ingredients are relatively inexpensive and easily available.
